Add cooking oil, turmeric, vermicelli noodles, wood ear mushroom, scallion, leeks and chillies. Wrap it up and grill over high heat for 20 – 30 minutes.

Chop the meat up, prepare rice paper, wet it and add steamed rice paper, lettuce, pickles, herbs, young banana shoot, starfruit slices, grilled pork. Roll it and serve.

Add the rat in the pressure cooker with the broth. Cook for 15 minutes. Scoop the rat meat out and place on a plate. Serve with the dipping sauce. | Dipping sauce: chillies, shrimp paste, sugar, lime and lemongrass.

RAT MEAT HOTPOT: Chop up rat head and legs and add to a pot. Add lemongrass, vietnamese curry leaves, fish sauce, MSG, turmeric powder and stir-fry for 2 mins. Add coconut broth and cook for 5 more minutes. Add chillies and wait till it’s fully boiled.
